Spelt & Maple Apple Tarte Tatin

I’m super excited about this week's new recipe. It’s not your typical classic apple tarte tatin. I’ve given it a little healthy ‘Gather & Feast’ makeover ☺. The pastry is made with stone ground spelt flour and gives the tart a lovely crumbly texture and flavour. It’s perfect served with crème fraiche, ice cream or natural yoghurt.

Endive & Radish Salad with Walnuts

In today's recipe, I am using thinly sliced radishes in a simple, yet super tasty French-inspired salad. The salad is quite basic and should only take you about 10 minutes to throw together. I have used endive (a light curly lettuce) as the base, but you could use any type of lettuce you like. Although I would try and use a lettuce with a bit of strength to it so when you add the dressing the leaves keep their shape.

Matcha, Coconut & Cacao Protein Balls

These pretty little things are the perfect mid-afternoon treat, post-workout, or ‘on-the-go’ snack. They are super easy to make (although you will need a food processor), and should provide you with enough snacks to get you through a few weeks (bulk meal preppers rejoice!).
