Maple, Tahini & Vanilla Granola

This week’s recipe is my delicious homemade granola. It contains no refined sugar and has no added oils. I have used tahini and pure maple syrup as the binders and their combination along with the vanilla bean is super delicious! It’s the way the clusters are created that gives this granola the perfect texture. I leave about ⅓ of the mixture whole and blend the remaining ⅔ in a food processor.

Fresh Strawberry & Vanilla Layer Cake

Well, I can’t believe Gather & Feast turns ONE this month! Wow! A BIG heartfelt thank you to everyone who has followed, loved, and supported G&F over the past year.

To celebrate, I’ve created this delicious strawberry and vanilla layer cake recipe. It is refined sugar-free and has dairy-free potential (if you decide not to create the layers). It’s the perfect dessert for your next party or gathering.

Spelt & Maple Apple Tarte Tatin

I’m super excited about this week's new recipe. It’s not your typical classic apple tarte tatin. I’ve given it a little healthy ‘Gather & Feast’ makeover ☺. The pastry is made with stone ground spelt flour and gives the tart a lovely crumbly texture and flavour. It’s perfect served with crème fraiche, ice cream or natural yoghurt.
