Maple Pecan Pie with Cinnamon Spelt Crust

We don’t celebrate Thanksgiving here in Australia, but I thought I’d join in the festivities anyway by creating my first ever Thanksgiving Pecan Pie with a Cinnamon Spelt Crust.

You may have noticed by now that I am a big fan of maple syrup. I love it! It works perfectly in this week’s recipe together with the pecans and cinnamon spelt crust. When you’re purchasing maple make sure you purchase ‘pure’ maple syrup and not an imitation maple flavoured syrup. I like to use B-grade maple that I purchase in bulk from my favourite grocer.

I LOVE coconut chia pudding, it's creaminess, it’s texture. I find it's the perfect sweet option for breakfast as it's protein-packed and keeps me going until lunchtime. I love to serve it with pure maple and fresh fruit.

Spring Grazing Board with Kale & Sunflower Seed Dip

While wandering through my favourite little gourmet grocer the other week, I came across the sweetest spring vegetables; baby carrots, little pink and white radishes, and the cutest zucchini flowers. I immediately began to think about what I could create with this beautiful fresh produce. The result was this delicious spring grazing board with fresh crudites.

A few days earlier I also created a Kale and Sunflower Seed spread to use on salad sandwiches and to pour over our steamed vegetables for dinner. It also worked as the perfect centerpiece for my spring grazing board.
