These delicious fruit and nut balls may look a little impressive, but trust me, they're incredibly easy to make and taste amazing. The combination of roasted nuts, oats, and coconut, blended with sweet, chewy dates, a hint of sea salt, and that luscious dark chocolate coating, is simply divine.

The secret to these balls lies in the texture inside. We achieve a satisfyingly 'rough' texture by skipping the food processor and simply mixing the ingredients together with our hands. The result? A mouthwatering blend of roasty, chunky, chocolaty goodness.

Who doesn't love the sound of smokey tomato baked eggs!? This recipe is not only my favourite for baked eggs but also the easiest. You're going to love it! It's also a crowd-pleaser and my go-to when hosting brunch or lunch gatherings.

The addition of the smokey paprika really elevates the flavour of these baked eggs. If you don't have any, I highly recommend purchasing some and keeping it in your pantry. It's one of my most-used spices. So good!

Tomato Vodka Fusilli with Fresh Basil

Here's a lush and flavour-packed Tomato Vodka Fusilli with Fresh Basil. Even though it uses seemingly simple ingredients, the sauce in this dish has an amazingly rich flavour.

It's my 'lighter version' of a creamy vodka tomato sauce. Instead of using 1 cup of cream like many vodka sauce recipes call for, I've used 1 cup of milk with 1/4 cup of cream. I find it still creates that delicious creamy sauce but without the heaviness a whole cup of cream can bring.
