Tomato Vodka Fusilli with Fresh Basil

Here's a lush and flavour-packed Tomato Vodka Fusilli with Fresh Basil. Even though it uses seemingly simple ingredients, the sauce in this dish has an amazingly rich flavour.

It's my 'lighter version' of a creamy vodka tomato sauce. Instead of using 1 cup of cream like many vodka sauce recipes call for, I've used 1 cup of milk with 1/4 cup of cream. I find it still creates that delicious creamy sauce but without the heaviness a whole cup of cream can bring.

This week's new recipe is a delicious lemon raspberry cake with zesty cream cheese frosting. A family favourite!

It strikes a perfect balance between sweet and tangy flavours, while the crumb boasts a wonderfully moist texture, thanks to the addition of olive oil and yoghurt.

I've topped the cake with a decadent cream cheese frosting that tastes divine. However, the cake stands on its own as a delicious treat, perfect for pairing with a cup of tea or served alongside fresh cream.

Coconut French Toast with Fresh Strawberries

This week's new recipe is this delicious coconut French toast with fresh strawberries and pure maple syrup.

Feel free to top the French toast with any fruit you have on hand. Bananas, berries or poached stone fruit would also taste delicious. I've used coconut milk but feel free to use any milk you have. I've also used coconut oil for frying but feel free to use butter.

This recipe serves 2-4 depending on how hungry you are, but feel free to double the quantities if needed.
