Creamy Zucchini Risoni (Orzo) with Lemon & Fresh Mozzarella

This weeks new recipe is a quick and easy creamy zucchini risoni (orzo) with lemon and fresh mozzarella. This pasta dish is beautifully creamy and lush while also fresh and zesty at the same time.

It is cooked very similarly to a risotto. The base ingredients are sautéed off, then the risoni added, the liquids, and finally, the butter and parmesan added to bring it all together and gloss it up.

Chicken, Coconut & Thai Basil Bowls

This week's new recipe is these delicious chicken, coconut, and Thai basil bowls, my take on 'chicken larb'. It's fresh, light, full of flavour, and super quick and easy to put together. Everyone in our family LOVED this one and have requested it many times since.

If you're after a vegetarian version simply use roughly crumbled firm tofu in place of the chicken, and lemon or lime juice in place of the fish sauce.

Rich Chocolate Loaf Cake with Baileys Original Irish Cream Cream Cheese Frosting

For this week's new recipe I teamed up with the guys from Baileys and created this deliciously rich and moist chocolate cake with smooth creamy cheese frosting and dusted with dark rich cocoa powder.

I tested many, many variations including a dense brownie-type cake but this 'airy' version was the winner! 

We used it for Mike's birthday + I also made an ice-cream cake with some of the leftovers by mixing the cake and frosting through vanilla ice-cream and dusting with cocoa before serving.
