Roasted Beetroot & Quinoa Salad

I love a good simple salad, especially one that can stand as a meal on its own. Today’s new roasted beetroot and quinoa salad recipe is just that! It’s light, earthy and almost perfect for all occasions. The most time consuming part of this recipe is the roasting of the beetroot and the preparation of the quinoa (about 45 minutes). You could easily prepare these ahead of time so to make it easier at the time of serving.

Peanut Butter & Dark Chocolate Granola Bars

I always seem to find a random jar of mixed nuts hiding away in my pantry. Most of the time they’re left over from an old dessert board I’ve used for entertaining (along with some dried fruit and dark chocolate). Instead of wasting them, I’ll usually try and add them into a new batch of granola or bake them into a healthy snack, like these peanut butter and dark chocolate granola bars.

Chai Soaked Fruit with Mascarpone Oat Tart

The main feature in this week’s new recipe is delicious chai-soaked fruit. It’s one of the simplest and most versatile sweet creations, and makes the perfect recipe on its own. You could serve it on a delicious stack of buckwheat pancakes, over ice cream for a quick and easy dessert, or as I have created here today; on a mascarpone tart with a crunchy oat crust. Yum!
