Roasted Beetroot & Carrot Salad with Chèvre

Autumn (fall) has just arrived in Melbourne, and with the changing of seasons comes a change in produce. I love the ‘seasonal crossover’. The tastes and textures of food go from cool, crisp, and fresh to a warmer, richer, more earthy tone (or the opposite for all my international friends).

Some of my favorite autumnal foods are root vegetables. I love their versatility and 'never-fail' factor. Whether a trusty addition to soups, the perfect roast side dish, or a warming ingredient to an autumn salad.

Cacao Wonder Balls

Snack attack! It happens to the best of us. Well, these cacao balls will be your best friends when that 3pm snack attack calls. Jam-packed with energy and superfood goodness, these sweet morsels are great for on-the-go, by your desk at work, or in your fridge at home.

These cacao balls are also SO easy to make! I usually make a batch and store them in the fridge, which will typically last me for a couple of weeks.

Niçoise Salad

I'm excited to share with you one of my favourite salad recipes, my Niçoise salad. This recipe is jam-packed with lots of goodies-fresh tomatoes, tinned tuna, hard-boiled eggs, olives, anchovies, cooked Kipfler potatoes, and green beans. It's a meal in itself, and perfect for lunches, picnics, and large gatherings.

Fresh and quality produce is key to perfecting this simple dish. I like to source a good quality tinned tuna and I find 'Sirena Tuna' to be the best in Australia.
