Spelt & Maple Apple Tarte Tatin

I’m super excited about this weeks new recipe! 

It’s not your typical classic apple tarte tatin. I’ve given it a little healthy ‘Gather & Feast’ makeover ☺. The pastry is made with stoneground spelt flour and gives the tart a lovely crumbly texture and flavour. It’s perfect served with crème fraiche, ice cream or natural yoghurt.

Endive & Radish Salad with Walnuts

I never used to cook with radishes, as I never quite knew what to do with them. That was until I visited France late last year and saw that keeping it simple is definitely best when it comes to using these cute little vegetables (if you haven’t already, make sure you check out my ‘Paris City Guide’ for all my favourite food spots and sights to see). Thinly sliced in a fresh salad, butter roasted and used as a side, or my favourite while travelling through France; fresh whole radishes served with salted butter and fresh crusty bread.

Matcha, Coconut & Cacao Protein Balls

Nutty, vanilla, matcha and cacao protein balls! These pretty little things are the perfect mid afternoon treat, post workout or ‘on the go’ snack. They are super easy to make (although you will need a food processor), and should provide you with enough snacks to get you through a few weeks (bulk meal preppers rejoice!).
