Roasted Tomato, Basil & Feta Gluten Free Pasta

Light, fresh and seriously yum, this pasta dish is a family favourite and was one of the first meals I ever cooked for my husband Mike when we first started dating. "Does this pasta have any meat in it?" I recall him asking, implying he was probably not going to be a fan of this strange vegetarian pasta dish. “No, no meat, but I think you'll still like it”. Now, ten years later it's still one of his favourite meals! Go figure.

Berry, Buckwheat & Hazelnut Crumble with Fresh Mint

I seem to always be experimenting with different ingredients and flavour combinations, and my latest creative success is this buckwheat and berry crumble. I have made many crumbles in my time but never with buckwheat flour so decided to give it a go. I've teamed this buckwheat crumble topping with fresh strawberries, blackberries, and a sprinkling of fresh mint. The tartness of the berries and freshness of the mint play nicely with the nutty, earthiness of the buckwheat and hazelnuts.
